Corn with some kick
Ingredients:
3-1/4 c fresh corn kernels
1/2 c diced onion (any type)
1/2 c diced tomato
1 serrano pepper, diced with seeds
1/4 c chopped cilantro leaves
1/2 T sea salt
Directions:
in a medium mixing bowl, combine corn, onion, tomato, pepper, cilantro, salt
transfer to a wide mouth quart jar or other fermenting container
pack down well to at least 1" below the rim of the container
cover jar tightly with lid or airlock
leave at room temperature for 2-3 days
transfer to cool storage
let age for 2 or more weeks before eating
