Ingredients:
Salad:
3 gala or golden delicious apples
3 c cauliflower
2 stalks celery
1 c currants, soaked
Dressing
½ t nutmeg and cinnamon
½ c cashews
1 c apple juice or apple cider or orange juice
Directions:
Salad:
wash, core and dice apples or put through food processor
wash and put cauliflower through food processor
chop celery
add currants
Dressing
blend all ingredients
pour over top
marinate for at least one hour
will keep for two days
