Asparagus Vinaigrette

Simple recipe for a great salad especially if you have asparagus fresh from the garden.

Ingredients: 

 

 

 

1/8 c olive oil

 

 

 

1 TBSP shallots, chopped

1 TBSP raw apple cider vinegar (I used raspberry wine vinegar)

1 TBSP fresh lime juice

1 tsp raw honey

celtic sea salt to taste

fresh ground pepper to taste

 

Asparagus spears, cut in chunks

Cherry tomatoes, cut in half

parsley, small handful, chopped 

Dressing:

Directions: 

Pour dressing over asparagus and tomatoes. Marinate for a few hours before serving.
