Curry Cauliflower Cous Cous

Fluffy and beautiful

Ingredients: 

Make this recipe just once and you'll be hooked on cauliflower.  The secret is to salt and squeeze

the juice out of the cauliflower,which leaves you a fluffy cauliflower rice.
1 head cauliflower, about 4 cups roughly chopped
1/2 orange bell pepper, finely diced
1/2 green bell pepper, finely diced
1/2 c cherry tomatoes, finely diced
1 TBSP curry powder (more or less to taste)
2 TBSP light miso
2 tsp cold pressed sesame oil
1/2 tsp salt or more to taste
fresh ground pepper
using the 's' blade in food processor, pulse cauliflower until it resembles rice
transfer to a bowl and add 1/2 tsp salt and combine
allow to sit for 15 minutes
place mixture in a seed mylk bag
squeeze out all the liquid
put mixture in a large bowl
add the rest of the ingredients
mix by hand until combined
add salt and pepper to taste
