Orange Cake with pecans

The orange is in the frosting, the cake is really coconut and pecans

Ingredients: 

CAKE

1 cup dates (soaked for a short while)   
1 cup pecans   
½ cup shredded coconut   
   
FROSTING   
Juice and zest from 1 orange   
1 cup of sunflower seeds soaked (use cashews for a creamier frosting)   
6 dates or TBSP raw honey   
1 tsp vanilla   
½ cup water  

Directions: 

CAKE

Place all ingredients into food processor and process until nice and crumbly   
Form “cake” ingredients into a cake shape.  Spread frosting on cake.     
Garnish with orange slices and sprig of mint

FROSTING

Blend everything in a blender
