Pesto Pasta

Pasta dish without wheat and gluten

Ingredients: 

3/4 c young coconut water
2 to 3 cl garlic
1/3 c fresh lemon juice
1/2 tsp salt
1 c raw pine nuts
1 c fresh basil
2 TBSP olive oil
6 to 8 zucchini

Directions: 

in a high speed blender combine all but the zucchini and blend until smooth
peel the zucchini
process in a spirooli for spaghetti style noodles
noodles are better if you can leave to sit at room temp for 6 to 8 hours
pour the sauce over the noodles
mix well
serve
