Pesto Wraps

Colorful appetizer or side dish with a pesto flavor

pesto, walnuts, basil, zucchini
Ingredients: 

2 cups of walnuts, soaked
1 cup of fresh basil
1 tomato, cubed
3 zucchini, cut into thin strips
3 cloves of garlic

Directions: 

Blend all ingredients except the tomato and zucchini in a blender.
Spread the pesto on the zucchini strips.
Place the tomato on top of the pesto and roll up the zucchini.
Secure with a toothpick and serve.
