Pineapple Coconut Coleslaw

Sweet Cole Slaw

Ingredients: 

1/2 tsp sea salt
3 c grated green cabbage
1 c grated carrot or jicama
1 c cashews, soaked
1/2 c dried coconut
1 c pineapple, cut into small chunks
2 TBSP agave nectar
water or pineapple juice as needed for the blender

Directions: 

in a bowl sprinkle salt onto the grated cabbage and carrots and stir
DRESSING
in food processor or blender, blend the cashews, 1/4 c dried coconut
1/4 c pineapple and agave nectar with just enough water to blend
Toss together the remaining pineapple and dried coconut with the grated
cabbage and carrot
Stir in the dressing until well mixed
