For the crust
1 cup of your favorite raw nuts ( I like almonds)
1 cup raisins
¼ spelt flour
2-3 tablespoons warm coconut oil
Spin first 3 ingredients in a food processor until desired consistency-slowly add a few tablespoons of warm coconut oil until mixture will stick together enough to form a crust in the bottom of a pie pan. Pop it in the freezer while you work on the filling
For the filling
2 avocado (room temperature)
1 cup soaked raw cashews
5 tablespoons stevia in the raw (or agave)
Juice and pulp from one lime
2 tablespoons lime zest.
¼ cup coconut oil
Spin 5 ingredients in a processor until creamy, slowly ¼ cup warm coconut oil while the processor is on
Pour mixture into crust and freeze.
Remove from freezer an hour or so before serving.
