Sweet Corn and Celery Soup

Nicely flavored, full bodied

Ingredients: 

2 c fresh sweet corn kernels   
2.5 c young coconut water, not the meat   
1/2 tsp olive oil   
2 tsp fresh thyme, finely chopped   
1 small carrot, diced   
2 cl garlic, finely grated   
1 stalk celery, chopped   
1/3 yellow onion, chopped   
sea salt to taste 

Directions: 

blend everything EXCEPT the corn until semi smooth   
add the corn and pulse chop for less than 5 seconds   
cover and set aside at room temp to mature for 10-20 minutes   
pour into soup bowls and garnish with cherry tomatoes, parsley and pepper
