Crunchy salad with a fresh taste.

Ingredients:
1/4 head of white cabbage
3 to 4 apples
2 stalks celery
1 stalk with leaf of bok choy (optional)
small bulb of fennel
10 to 15 spearmint leaves (put together and slice thinly then slice in
the opposite direction for the pieces are very small)
grate 1/2 to 1 inch of fresh ginger
juice of 1 lime
juice of 1 1/2 oranges
Directions:
chop the first 5 ingredients into small pieces
mix with the juices
grate the lemon peel and ginger
toss again
