Lentil sprouts and veggies on a leaf with dressing

Ingredients: 

2 c sprouted lentils  
1 c tomato chopped 
1/2 c cucumber, chopped  
1/2 c yellow pepper, chopped 
1/2 lemon juiced  
1/4 c cilantro, chopped 
1 carrot shredded  
dash cayenne 
sea salt and pepper to taste
6-12 Romaine or Radicchio leaves 

Mrs Ackerly's Dressing   
1/2 c olive oil  
1/3 c onion 
1/4 c red bell pepper  
1 carrot 
2 TBSP apple cider vinegar  
1 TBSP honey 
1/4 tsp sea salt  
dash pepper 

Directions: 

In a large bowl toss all but the leaves
put a scoop of salad into each leaf
place on a platter
drizzle with Mrs Ackerly's Dressing or any of your favorite dressings

Mrs Ackerly's Dressing

Blend all ingredients in a blender
Can also be used as a marinade
