Ingredients:
1 c almonds, NOT soaked
3/4 c walnuts NOT soaked
1 1/4 c raw Turkish dried apricots soaked in OJ for 20-30 minutes
1/4 c soaked medjool dates
1 TBSP orange zest
1 TBSP grated ginger
2 TBSP honey
Directions:
coarsely chop the nuts and set aside
in food processor grind the rest of the ingredients to pasty consistency
add nuts to processor to form a ball
transfer to a bowl
form ball shaped cookies, press just slightly down so doesn't roll
scatter orange zest over the cookies
