The lemon macaroons with a raspberry center

Ingredients:
1 c cashews soaked 4 hours
zest of 1 lemon
1/2 c fresh lemon juice (about 2 lemons)
1 c dry shredded coconut
1/4 c agave
1/2 c raspberries or favorite fruit
Directions:
process cashews in food processor until they are pasty
mix in all but the raspberries
place 1 TBSP dough on dehydrator sheet
press flat with a small indentation in center
blend raspberries with 1 TBSP agave
spoon into center of cookie
dehydrate for 10-12 hours
