Apple pie with a nut crust and fluffy topping

Ingredients: 

Crust   
1 c raw organic almonds soaked 8-48 hours   
1/2 c dates, pitted and soaked 1-2 hours, in fresh apple juice or water   
1/2 tsp orange zest (optional)   

Filling   
4-6 organic apples of choice, chopped and soaked in fresh apple juice   
1/2 c pureed dates, soaked 1-2 hours in fresh apple juice or water   
1/2 c chopped walnuts, soaked 48 hours in pure water   
1/2 c raisins, soaked 1-2 hours in fresh apple juice or water//  1 tsp cinnamon   

Topping   
1/2 c almonds soaked 8-48 almonds   
1 c dates, soaked 1-2 hours in fresh apple juice or water   
1/2 tsp vanilla   
 

Directions: 

Crust   
Mix in a food processor  and then press into a pie plate   

Filling   
drain all the soaked items, combine in a bowl and then pour into pie shell   
 

Topping   
Blend, using enough water OR the soak juice for a smooth fluffy texture
