Ingredients: 

8 carrots grated   
1/2 c fresh basil   
2 TBSP olive oil   
1/4 c dried cranberries   
1/4 c almonds, crushed   
1/2 lemon juiced   
1/2 tsp sea salt 

Directions: 

mix all ingredients in a bowl   
wait 15 minutes before serving to allow time for the flavor of the cranberries   
to seep throughout the dish   
serves 3-4
