Cauliflower Couscous

An interesting combination of flavors

Ingredients: 

2 heads cauliflower, finely ground in a food processor   
1/2 c fresh lemon juice   
1 c olive oil   
3/4 tsp sea salt   
1 bunch fresh parsley, stems removed   
1 bunch fresh mint, stems removed   
1 bunch fresh cilantro, stems removed   
3 tsp black pepper   
1-13 oz jar pitted Greek olives 

Directions: 

in a large mixing bowl combine all ingredients and mix thoroughly.   
   
I did a little pulse chop on the parsley, mint and cilantro so the leaves were   
not so large, Cricket
