Raw Apple Pie

A nice zing from the orange zest in the crust

Ingredients: 

Crust
2 cups soaked almonds (1 1/4 c before soaking) Soak 8-48 hours, rinse twice a day
1/2 c pitted dates
1 tsp orange zest
(Elaina used walnuts instead of almonds)

Crust
Process all ingredients in a food processor until well mixed and almonds are in very small chunks
Press into glass pie plate lightly oiled with flax oil
place in dehydrator at 110 degress for 8 hours (optional)

Filling:
1 c pitted dates (soaked)
6-7 med apples, 3 sliced thin and 3-4 shredded
1 tsp lemon zest or juice
1 tsp cinnamon
1/4 tsp nutmeg
1/2 c chopped walnuts soaked 48 hours, rinsed twice a day
1/4 to 1/2 c raisins, soaked

Filling
Drain dates and process in food processor with seasonings.
In a large bowl, mix dates with remaining ingredients with your hands.
Fill the pie plate and let set in fridge for 2 or more hours

Almond Cream Topping
1/2 c soaked, peeled almonds (peeling is optional)
6 lg dates, pitted and soaked in 1 c water
1/2 tsp vanilla
blend all including soak water until creamy
pour over individual pie pieces

Cashew Cream Topping
1 c raw cashews, soaked
1/4 c + 2 TBSP water
2 TBSP maple syrup
1 tsp vanilla
blend on high speed until smooth
chill at least 30 min before serving

I believe the Cashew cream is smoother but it is a personal choice
