Almond Date Bars

A treat to keep in the fridge to just pop in your mouth when feeling hungry

nuts, dates
Ingredients: 

3/4 c pitted dates, soaked 1 hour in 1/2 c water
1 T lemon juice
1 1/2 t lemon peel
2 C ground almonds

Directions: 

drain dates, reserving water
Blend dates, lemon juice and peel til smooth adding a little water if necessary
Knead in ground almonds
form into small balls
refrigerate untill ready to serve
Can be kept in fridge for up to3 weeks
Makes 24-30 balls.
