The best raw food bacon I've ever had. I use it on raw BLT
Ingredients:
In a bowl, marinate:
1 lg eggplant, thinly sliced length wise
1/4 c olive oil
1 tsp cayenne
2 TBSP honey
4 TBSP Ume Plum vinegar
Directions:
marinate for 2 hours, or more if desired. Place on teflex sheets and
dehydrate for 9 hours, Turn 'bacon' over and dehydrate for another 9 hours
'Bacon' should be crispy
