Variation of the bulger wheat tabouli

Ingredients: 

1 C barley before soaking which will make 2 c after soaked. Soaked for 4 days, rinsing twice a day and putting fresh water to cover
2 c minced parsley
Med red onion minced
1/2 red bell pepper minced
2 cloves garlic minced
1/4 t celtic salt or to taste
1 T apple cider vinegar
1 t thyme
1 t basil

Directions: 

mix well
let stand an hour or so for flavors to combine
