Berry Pie

Delicious pie with a great fruity flavor

Ingredients: 

Crust:
2 c almonds soaked 12-48 hours and blanched
1/2 c dates
1 t vanilla
Filling
4 c berries any combination
1 c apples finely grated
1/4 c dates
4 T psyllium
1 t vanilla

Directions: 

Crust
process almonds in food processor until finely chopped, slowly add dates
& vanilla.
Press into a 9" pie plate
Filling
process 2 c of berries the apples and dates in food processor with the "s"
blade.
Add psyllium and vanilla, mix well,
pour into crust.
Add remaining 2 cups of berries to the top of the pie
refrigerate before serving
Works well with frozen or fresh berries. If use frozen be sure to put them out ahead of time to be thawed
