I love this salad. It has such a unique flavor.
Ingredients:
SALAD
1 head romaine, chopped to bite sized
1 cucumber chopped
1 red pepper chopped
1/2 c red onion, chopped
1 lg carrot shredded
1/2 c dried coconut, shredded
DRESSING
2 TBSP olive oil
1 lemon juiced
1 TBSP honey
1/2 tsp cumin powder
1 lg cl garlic pressed
1/2 tsp Herbamare or sea salt
1/4 c pumpkin seeds, ground
Directions:
SALAD
combine ingredients in a large bowl
DRESSING
Mix all in a measuring cup
pour over the vegetables
toss well before serving
