Carrot Cake or Tarts

Delicious, better than the cooked version

Ingredients: 

Cake   
7 carrots, blended well in food processor, and put in large bowl   
1 c walnuts, blended until fine in food processor, add to the bowl   
1 c dates, pitted and soaked, then blended smooth   
1/2 tsp ginger   
1/2 tsp cinnamon   
1/4 tsp cardamom   
1/4 tsp nutmeg   
3/4 c raisins, soaked for at least one hour   

Frosting   
3 TBSP honey   
3 TBSP orange juice   
1 C cashews, soaked   

Directions: 

Cake   
stir all together   
Frosting   
Blend all until smooth and spread on cake
