Cherry and Cacao Cookies

Sweet with a bit of crunch

Inspired by Ani Phyo's Recipe

Nut Base
1 c walnuts (be sure to carefully check for shell pieces
1 c pecans
1/4 tsp sea salt
Pulse to small chunks in food processor and place in small bowl

Nut Butter
1/3 c walnuts
1/4 tsp sea salt
Process into a butter in food processor and place in a small bowl

13 medjool dates
1 heaping cup dried cherries
1/2 c raw cacao beans or nibs(soaked 30 minutes in cold filtered water)
Optional couple drops of vanilla

pulse chop in food processor until cacao is desired size


add back the nut base and butter and process just until well combined
pour into a pan and press to make squares or make it into balls or flatten them into cookies
