Substitute for the salads that use the Ramen noodles

napa cabbage
Ingredients:
Salad
1 napa cabbage finely shredded
2 c mung bean sprouts
1 c snow peas stemmed
4 green onions, finely chopped
2 stalks celery, finely chopped
1 carrot finely grated
Dressing
8 pieces dried apricots, soaked in 1/2 c water for 4 hours (save the water)
1/2 t ginger
1/2 t mustard
3 T lemon juice
1/4 c Braggs
1/4 c flax oil
Directions:
Salad
combine in a bowl
Dressing
mix in blender until smooth using the soak water to adjust consistency
Sauce should be thick but not a paste.
Pour over salad and toss.
