Hearty with lots of flavors
Ingredients:
3/4 c lentils, sprouted
1 shallot, havled lengthwise
1 c celery, chopped
1/2 c yellow bell peppers, chopped
1/2 c red onions, finely chopped
1/2 c plum tomatoes, chopped
Dressing
2 TBSP chopped fresh parsley
2 TBSP chopped fresh mint (optional)
3 TBSP lemon juice
1 tsp honey
1 tsp walnut or olive oil
1/2 tsp chopped garlic
salt and pepper to taste
whisk to combine
pour over salad
