Mango Pie

Sweet and salty, great texture

Ingredients: 

Crust   
2 c almonds or walnuts   
1/2 c dates, pitted and soaked   
Filling   
4 mangoes   
6 banana  

Directions: 

Crust   
in a food processor grind the almonds until fine   
add the dates and blend until smooth   
remove from food processor and pat down into a pie shell   
Filling   
peel the meat off of 4 mangoes and place in a food processor with 4 of the   
bananas and blend until smooth, I added a couple tsp of psyllium    
slice the other 2 banana and mix with the filling or press as a next layer   
on the crust.     
pour into pie shell and chill until stiff
