Marinated Mushrooms

Nice treat to have in the fridge for when you get hungry and just want something

mushrooms, fermented foods
Ingredients: 

3 lbs shitake, crimini or regular button mushrooms
1 c lemon juice or apple cider vinegar
1 TBS honey
1 bunch fresh basil
1/2 c olive oil
2 TBS celtic salt
1 c water
1 chili pepper

Directions: 

Clean the mushrooms, and place in a gallon jar
Blend the rest of the ingredients in a blender and then pour over the mushrooms
Marinate on the counter for one day, shaking occasionally to coat them all
Will shrink down to 1/2 gallon
keeps for a couple weeks in the refrigerator
