A cake that even non raw foodist love

orange, coconut
Ingredients:
4 oranges peeled and seeded
1 banana
4 c coconut
1 tsp vanilla
FROSTING
1 c cashews soaked 4 hours, drained
4 TBS maple syrup
1 tsp vanilla
1 tsp lemon zest
Directions:
Cake
blend oranges and banana until smooth and pour into a bowl
Add coconut and vanilla stir until stiff
shape into cake form on a plate and chill til firm
Frosting
blend the cashews well with 1/4 C water or apple juice, adding more as needed for
consistency
add maple syrup, vanilla, lemon zest
blend again
if too runny add more cashews
frost cake and chill again
leftovers can be rolled into balls and rolled in ground flax or pressed into
cookies and dehydrated
