really pretty and tasty beets


1-3/4 c peeled, quartered & sliced beets
1-3/4 c peeled, quartered & sliced turnips
1 c scrubbed carrots, cut into small sticks
3 cloves garlic, sliced in thirds
2 C basic brine plus additional as needed


pack veggies and garlic in a wide mouth quart jar or other fermenting container
pour brine over all but keep below 1" of the jar rim
add a regular mouth lid to weigh down ingredients below brine
cover the jar tightly with lid or airlock
leave at room temperature for 5 to 7 days
transfer to cool storage
release built up gas in jar by loosening and retightening jar rings
