Psyllium Pudding

fruit, parfait, pudding
Ingredients: 

Your favorite fruit for slicing and layering
2 C water
1 tsp salt
1/2 c honey or dates
2 TBS vanilla extract
1 C almonds
1/2 lemon with peel

Directions: 

Slice fruit into the bottom of clear bowls or cups
Blend all ingredients except the fruit
the liquid will be thin.
Add 8 to 9 tsp psyllium powder while blender is running.
Quickly pour into cups over the fruit.
You can make as many layers of psyllium and fruit as you like, but have the fruit cut up ahead of
time as the pudding will set up quickly
