Pumpkin Pie

Use pumpkin or squash for this great dessert

Ingredients: 

Crust

2 c almonds
1/3 to 1/2 c dates, pitted and soaked

Filling

2 C shredded pumpkin or butternut squash
1 c dates
1/2 c almonds, soaked or sunflower seeds
2 tsp cinnamon
1 tsp ginger
1/2 tsp ground clove
1/2 tsp nutmeg
1/4 c waterTopping
1 c cashews
1/2 c water
1/2 tsp honeypumpkin pie seasoning to taste

Directions: 

Crust
put all ingredients into food processor
process until smooth
press into a pie plate

Filling
Mix pumpkin in food processor for several minutes
add other ingredients
blend until smooth
pour into pie plate

Topping
blend all in Vita-Mix until creamy
do not over do or it will be hot

Pie is best served chilled
