Quinoa and Cilantro Salad

Quinoa has lots of protein so a good side dish for a salad meal


2 c quinoa
1-1/2 c snipped cilantro
3 medium tomatoes, chopped
1/3 c chopped green onions (with tops)
2 T snipped fresh mint
¼ c olive or vegetable oil
¼ c lemon juice
1 t salt
¼ t pepper


cover quinoa with cold water, let stand 30 minutes
drain and press out as much water as possible
place quinoa, cilantro, tomatoes, onion and mint in bowl and toss
in separate bowl mix remaining ingredients and pour over quinoa mixture
toss, cover and refrigerate at least 1 hour
