A great raw alternative to this popular Spanish dish.
Dressing Ingredients:
1 pinch saffron
2 TBSP lemon juice
2 TBSP olive oil
1 tsp honey
dash sea salt
Marinated Mushroom Ingredients:
½ c mushrooms (I use shitake, but oyster or others are good)
½ c water
¼ c rice wine vinegar (apple cider would work too)
2 TBSP nama shoyu or other soy sauce
1 TBSP dulse flakes
1 tsp paprika
Paella Rice Ingredients:
1-1/2 c chopped turnips (or cauliflower)
½ c pine nuts
¼ c bell pepper
2 TBSP onion
½ c fresh peas
2 small tomatoes, chopped
¼ c sun dried tomato, soaked and well chopped
¼ c parsley
Dressing Directions:
soak the saffron in the lemon juice for 20 minutes then wisk in the remaining ingredients
set aside for later
Mushroom Directions:
combine wet ingredients with dulse flakes and paprika
add mushrooms and let marinate
Paella Rice Directions:
combine the turnips (or cauliflower), pine nuts, bell pepper and onion in food processer and pulse until they have a grainy, rice-like consistency
into this mixture add the peas, both tomatoes, parsley and the saffron dressing
top with the marinated mushrooms (drained) along with sliced green olives, additional finely chopped parsley and a dusting of paprika
