SPRING ROLLS
10 rice paper wraps
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1 cucumber
5 whole green onions
spinach leaves
basil leaves
DIPPING SAUCE
1 mango
1 avocado
1 lime
half deseeded jalapeno
SPRING ROLLS
clean and dry produce
chope the bell peppers, cucumber and green onions into thin strips
soak the rice paper in a bowl of warm water for a few seconds to allow to soften
place wrapper on cutting board
let sit until it becomes pliable
begin by layerin spinach leaves on the edge closest to you
drizzile with a tsp of mango dip
top with a mix of the veggie strips and basil
wrap the edges over the veggies
roll and tuck
make sure the spring roll is tight
Dipping Sauce
peel the mango and avocado
remove the pits and place flesh in food processor
add the deseeded jalapeno pepper
add the lime juice
Blend until smooth
pour into a bowl for dipping
