Raw Veggie Stir Fry

Wonderful oriental flavors in a raw food dish

Ingredients: 

1-1/2 c shitake mushrooms soaked in coconut aminos for at least 25 minutes & drained
½ c raw cashews, chopped
½ c fresh young coconut meat, chopped
1 c broccoli, chopped
1 c carrots, sliced super thin (round disc slices)
¼-1/2 c parsley, chopped
½ c purple cabbage, chopped
½ c onions:  purple, white, yellow or chives chopped
½-1 c zucchini sliced lengthwise, super thin (like matchsticks)
½-1 c daikon, sliced like the zucchini
¼ c celery, peeled and finely chopped
½-1 T jalapeno, chopped
½ c shallots, chopped
½ c yellow bell pepper, chopped
½ c red bell pepper, chopped
½ c water chestnuts, peeled and chopped (or canned)
1 c bok chow, chopped
1 T minced ginger
1/3 c fresh lemon juice
1/3 c fresh orange juice
½-3/4 c raw olive oil

If you like you can add fresh herbs of your choice

Directions: 

since you are not actually cooking, the key to “Raw Stir Fry” is to chop ingredients very fine and small
use a mandolin on the vegetables to make them soft
