Raw Zucchini Pasta and Creamy Avocado Cucumber Sauce

Not your average past dish, very good too


1 lg zucchini (1 per person)
grape or cherry tomatoes, halved
zest of one meyer lemon or regular lemon
pea shoots, optional
jalapeno, thinly sliced, seeds removed, optional

Avocado-Cucumber Puree Dressing
1 med avocado
1 cucumber, peeled and sliced thick
juice of 1 lemon as above
2 garlic cloves
1/4 tsp white pepper or black pepper to taste
salt to taste
a few leaves of basil, optional


Prepare the zucchini julienne style or spiralized

Puree everything in a blender
taste for flavor, adjusting to taste
Toss with zucchini pasta and handful of arugula.
Serve with tomatoes, pea shoots, jalapenos, lemon zest, lemon wedges and fresh cracked pepper
