Red Quinoa Salad with Avocado

A recipe converted from cooked quinoa using sprouts instead

Ingredients: 

1 c red quinoa, soaked 5 hours and sprouted overnight
1/4 tsp sea salt
1/4 c macadamia nuts blended with 1/4 c water or 1/4 nut yougurt
2 TBSP fresh lime juice
2 tsp olive oil
1/4 tsp black pepper
1 avocado
1/2 c coarsely chopped cilantro
1 lg cucumber, peeled, seeded and diced
2 TBSP hulled sunflower seeds
1 tomato chopped

Directions: 

stir together the yogurt, 1 TBSP of the lime juice, oil and pepper
cut the avocado into cubes and toss with the other TBSP of lime juice
add everything but the avocado to the quinoa and toss
add the avocado and toss very gently
serve sprinkled with the sunflower seeds
