Slaw with a kick
Ingredients:
SLAW
3 c cabbage, sliced thinly
3 c red cabbage, sliced thinly
1 lg carrot, grated
2 c jicama, shredded
1 small sweet red onion, sliced thinly
1/4 c fresh cilantro leaves, minced
DRESSING
1/2 c raw apple cider vinegar
1/2 c olive oil
1/2 c fresh pineapple pieces
1/4 c raw honey
1 tsp fresh lime juice
1/4 c fresh cilantro leaves
1/2 tsp ground cumin
1/2 tsp sea salt
pinch of cayenne or to taste
Directions:
prepare slaw ingredients, mix and set aside
place all dressing ingredients in Vita Mix and process until creamy
pour over prepared slaw, mix well, and serve or refrigerate until served
