Summer Corn Salad

Corn with a nice creamy dressing

Ingredients: 

Salad   
3 c fresh corn, cut from the cob, approx 4 ears   
1 c roughly chopped celery   
1 c chopped scallions   
1 bunch fresh cilantro, stems removed, diced   
Dressing   
1/2 c Thai coconut water   
1/4 c fresh lemon juice   
2 TBSP agave nectar   
2 TBSP olive oil   
1 1/2 tsp sea salt   
1 TBSP curry powder   
 

Directions: 

Salad

combine all in a lg bowl   

Dressing   
Combine all in a high speed blender & blend until smooth.  Pour over the   
salad, toss well to mix the dressing with the salad and serve
