Sweet Potato Casserole


Like a traditional sweet potato dish at Thanksgiving

2 1/2 c walnuts, soak overnight, drain and let air dry 6 hrs, dehydrate 3 hrs   
4 c peeled, diced sweet potato, soaked overnight, drain and discard water   
 the smaller you can dice these the better for removing the starch  
3/4 c raisins, soaked overnight, save soak water   
1 1/2 tsp cinnamon   
1 tsp Five Spice mix  
1 tsp celtic sea salt 
2 tsp vanilla  
1/4 c agave


In food processor process the potatoes, 3/4 c of the walnuts, all the raisins   
cinnamon and vanilla and 1/2 tsp salt.   
I wanted a smoother texture so I processed first in the food processor and   
then put half at a time in the VitaMix and until very smooth   
pour into casserole dish   
process remaining walnuts, 1/2 tsp salt and the agave on pulse    
sprinkle over the casserole mixture   
can place in dehydrator for a couple hours to warm or serve cold
