Thai salad with the curry kick

curry, young coconut, sunflower seeds, cucumbers
Ingredients: 

4 cucumbers peeled and thinly sliced
juice of 1 lemon
1 bunch of dill finely chopped
1 bunch of cilantro finely chopped
1 med onion diced
meat of one young coconut, finely diced
3 tsps hot curry powder
1 tsp salt (to taste)
3 TBS honey
1/3 c olive oil
1 c sunflower seeds, soaked for 2 hours

Directions: 

Mix well. Serves 5-8
