What's For Dinner Loaf

Veggie 'meat' loaf

Ingredients: 

1/2 c almonds
1 1/2 c flax seeds
1/2 c pumpkin seeds
1 c celery, juiced, discard pulp
1/2 c red onion, minced
4 cl garlic, minced
1 c finely shredded carrot
1 tsp salt
1 TBSP rosemary
1 TBSP sage

Directions: 

Process the almonds, flaxseed and pumpkin seeds to a meal in a food processor
Combine with everything else
Mix thoroughly
Set aside for 3 to 4 hours for flavors to blend.
form mixture into a loaf and serve

The longer it sits, the stronger the flavors become.
